PREFERENSI KONSUMEN TERHADAP DAGING DADA AYAM PEDAGING YANG DIBERI RANSUM MENGGUNAKAN TEPUNG CACING TANAH ( Lumbricus rubellus ) (Consumer preferency on Broiler Breast Meat Fed Ration Utilizing Lumbricus rubellus Earthworms Meal ) HETI RESNAWATI ABSTRACT A study was conducted to investigate the effect of earthworm meal levels in the ration on organoleptic test of broiler breast meat. Eighty broilers were assigned into 20 cages with 4 chicks per cage as an experiment unit. This experiment used a completely randomized design with four treatments (control versus 5, 10 and 15% earthworm meal) and five replications. The chickens were reared for a 5 weeks period, and then 10 chickens from each treatment were slaughtered to obtain data on consumer preferency of breast meat.Parameters observed were color, texture, taste, tenderness and flavor of broilers breath meat. It was found that earthworm meal levels in the ration were not significantly (P>0.05) affected on the consumers preferency of all breast meat parameters compared with the control. This condition indicated that earthworm meal could be used as alternative feed ingredient in the broiler ration according to high consumers preferency on breastmeat. ABSTRAK Suatu penelitian dilaksanakan untuk mengetahui pengaruh kadar tepung cacing tanah dalam ransum terhadap uji organoleptik pada daging dada ayam pedaging. Delapan puluh ekor ayam dibagi ke dalam 20 kandang dengan 4 ekor ayam per kandang sebagai satuan percobaan. Penelitian ini menggunakan Rancangan Acak Lengkap dengan 4 perlakuan (kontrol terhadap 5, 10 dan 15% tepung cacing tanah) dan 5 ulangan. Ayam dipelihara selama 5 minggu, kemudian 10 ekor ayam dari masing-masing perlakuan dipotong untuk memperoleh data preferensi konsumen terhadap daging dada. Parameter yang diamati adalah warna, tekstur, rasa, keempukan dan aroma daging dada ayam pedaging. Hasil percobaan menunjukkan bahwa kadar tepung cacing tanah dalam ransum tidak nyata (P>0.05) mempengaruhi preferensi konsumen terhadap daging dada dari semua perlakuan dibandingkan dengan kontrol. Keadaan ini memperlihatkan bahwa tepung cacing tanah dapat digunakan sebagai pakan alternatif dalam ransum ayam pedaging berdasarkan tingginya preferensi konsumen terhadap daging dada.
